The elaboration of all good wine<\/strong> is a process that takes time, patience, know-how and a good dose of luck, affection and love. But not everything depends on the hand of man, this process is always influenced by a series of external factors<\/strong> , such as the climate of the area or the characteristics of the terroir that hosts the different varietals of grapes.<\/p>\n

At Bodegas del Saz<\/a> , we take great care of each and every detail of the process of making our wines<\/strong> . This exclusive and innovative dedication, together with the location and privileged characteristics of our vineyards, translate into the best possible fruit: new generation wines and signature stamp.<\/p>\n

The grapes, starting point<\/strong><\/h2>\n

Without a good raw material it is impossible to obtain a great product. Or what is the same, without good grapes<\/strong> it is very difficult to get a quality wine<\/strong> .<\/p>\n

Starting from the previous premise, at Bodegas del Saz we always pay special attention to the state of our grapes in the vineyard<\/strong> . Ensuring that they are always in an optimal state of health<\/strong> and controlling their degree of maturation<\/strong> and acidity.<\/p>\n

The Harvest, time of harvest and celebration<\/strong><\/h2>\n

Once the ideal moment for harvesting our grapes has<\/strong> arrived, a decision always considered by our expert viticulturists<\/strong> and the oenologist<\/strong> , we take the utmost care in treating the different grapes during the harvest work<\/strong> and their subsequent transport to the winery.<\/p>\n

This is also the harvest, a moment that is a reason for joy<\/strong> and celebration when collecting the fruits resulting<\/strong> from the hard work carried out during a whole year.<\/p>\n

Already in the winery, we begin the first steps to transform the best fruit, our grapes, into what will be its final result, our different wines. Among these, some steps are essential in the wine-making process, such as: destemming, work in which the grape is separated from the stalks or crushing, consisting of extracting the must from the grapes.<\/p>\n

Fermentation, transition from must to wine<\/strong><\/h2>\n

After the first steps in the wine-making process, the moment of fermentation<\/strong> arrives, an incredible chemical and almost magical process<\/strong> that transforms the must<\/strong> into our different wines<\/strong> .<\/p>\n

Throughout this process, frequent pump<\/strong> -over work is very important to guarantee the extraction of all substances from the grape skins, as well as temperature<\/strong> control to avoid too fast fermentation.<\/p>\n

There are different types of fermentations: alcoholic fermentation, malolactic fermentation … but that is already in a chapter that we will deal with separately.<\/p>\n

Aging, obtaining more complex wines<\/strong><\/h2>\n

Not all of our wines end their journey with final fermentation and subsequent bottling. There are certain wines to which we give a greater personality<\/strong> and complexity<\/strong> by subjecting them to a process of aging<\/strong> and aging in oak barrels<\/strong> .<\/p>\n

Some of our wines are worth highlighting here. An authentic jewel like Vidal del Saz Tempranillo Reserva<\/a> , a complex signature wine with marked aromas and aged for 12 months in oak barrels<\/strong> and 6 in bottle.<\/p>\n

Bottling, final wine break<\/strong><\/h2>\n

Once the fermentation process is finished and some preliminary clarification and stabilization work has been carried out, the process of making our wines comes to an end with bottling<\/strong> and labeling. The latter processes that give body and identity<\/strong> to our wines and that will reach the final consumer<\/strong> . A consumer who, despite cultural and language differences, always knows how to appreciate a good Bodegas del Saz wine.<\/p>\n
